Grilled Potato Skins with Chedder Cheese, Crumbled Bacon, and Sour Cream
Grilled Potato Skins
For that quick St. Patrick's Day gathering, this is the perfect appetizer. What makes these potato skins better than others is that they are cooked on the grill.
Steps


  • Preheat your grill to medium-high heat (around 375-400°F or 190-200°C).

  • Scrub the potatoes clean under cold water and pat them dry with a paper towel.

  • Pierce each potato several times with a fork to allow steam to escape during cooking.

How to make

Grill the Potatoes:

  • Rub the potatoes with olive oil and season them generously with salt and pepper.

  • Place the potatoes directly on the grill grates and close the lid.

  • Grill the potatoes for about 45-60 minutes, or until they are fork-tender and the skins are crispy. Turn the potatoes occasionally to ensure even cooking.

Prepare the Potato Skins:

  • Once the potatoes are cooked, remove them from the grill and let them cool slightly until they are safe to handle.

  • Cut each potato in half lengthwise.  

  • Using a spoon, carefully scoop out the flesh from each potato half, leaving about 1/4 inch of potato attached to the skin. Reserve the scooped-out potato flesh for another use, such as mashed potatoes.

Grill the Potato Skins: 

  • Brush the inside and outside of each potato skin with a little more olive oil.  

  • Place the potato skins back on the grill, cut side down.  

  • Grill the skins for about 5-7 minutes, or until they are golden brown and crispy.

Add Toppings: 

  • Remove the potato skins from the grill and place them on a serving platter.  

  • Sprinkle each potato skin with shredded cheddar cheese and crumbled bacon.  

  • Return the potato skins to the grill and close the lid for a few minutes, just until the cheese is melted.

Serve: 

  • Remove the potato skins from the grill and sprinkle them with chopped green onions or chives.  

  • Serve the grilled potato skins hot with sour cream on the side for dipping, if desired.

  • 4 large russet potatoes

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 1 cup shredded cheddar cheese

  • 4 slices cooked bacon, crumbled

  • 1/4 cup chopped green onions or chives

  • Sour cream, for serving (optional)
