Aunt Teresa's Original Recipe
Italian Sausage and Pepper sandwiches that will rival those found in NYC or on the Jersey boardwalk. Easy to assemble and cook and fun to eat.
Steps
Clean and slice the peppers lenthwise.
Peel and slice the onions lenthwise.
Peel and chop the garlic cloves.
Mix ingrediants in bowl.
Stir in the basil, oregano, garlic powder (sprinkle over top), black pepper, salt (optional)
Add olive oil, enough so it coats the peppers, onions and spices but not so they are swimming in oil.
Toss until well coated. You can add more olive oil is needed.
Heat the Grill to 400 degrees.
Using a grilling basket, cover in aluminum foil and spray with a non-stick spray.
Place the peppers and onion mixture into the grilling basket.
How to make
Place the filled grilling basket on the grill to either the right or left side. On the open side of the grill place your Italian sausage.
Grill the sausage, turning frequently, until they are golden brown and have the requisite grill marks, this is usually when the sausage is just starting to “blister” with the fat trying to escape.
Do not let too much of the fat escape as you'll want the juice from the sausage to flavorize the peppers and onions.
At this point place the sausage in the same grilling basket as the peppers and onions, stirring the mixture frequently.
The sausages will cook the rest of the way when mixed with the Peppers and Onions. Continue grilling until the peppers and onions are soft and flexible.
They can be slightly firm or soft, adjust according to your taste. For that extra kick you could add some of your favorite barbecue sauce now, again stirring the mixture frequently.
Using a large spoon empty the grilling basket into a large casserole dish for serving. Slice the rolls and create yourself the perfect sausage peppers and onion sandwich you’ve ever had.

Main Items
8 Sweet or Hot Italian Sausages
3 Green Peppers- sliced
3 Red Peppers - sliced
2 Medium Onions -sliced
4 Cloves of Garlic chopped
8 long or round hard rolls, your choice.
Seasoning
Basil- About one tsp or more if you prefer
Oregano-About one tsp depending on your taste
Garlic Powder - just sprinkle over the top
Pepper – about ½ tsp
Salt (optional)
